Arenga sugar is well known as Javanese sugar. It is processed by getting palm tree sap which is taken from the male flower bunches. Usually, if the flower doesn’t transform into palm sugar, the fruit is made kolang kaling. To get arenga sugar, there are several stages and this takes quite a long time when starting from the beginning of taking the sap.
The Benefit
Many health experts say that the number of calories contained in arenga sugar is less than the calories contained in white sugar, thus palm sugar is healthier to consume and does not cause a significant spike in blood sugar levels. In addition, one of the elements contained in palm sugar has a function to control and clean the digestive tract, starting from the stomach and throat. Riboflavin which is one of the elements contained in palm sugar, functions to launch metabolism and optimize cell function, so that the body’s stamina is maintained.
Thus benefits are good especially for people with epilepsy, diabetes, hypertension, high cholesterol, ulcers, gout and rheumatism and others.
Manufacturing Process
Making Arenga Sugar begins by placing bamboo or a container under the bunches for about overnight, then in the morning the neera water is fully obtained. This sap water can be consumed directly, because it tastes sweet and fresh.
Once collected, the juice is then boiled in a large space. The farmers use firewood from old palm wood in order that the processing will be faster. Note, that the fire must be balanced to avoid the sugar taste bitter and the color turns black.
The arenga sugar process is finished when the color of the liquid becomes thick. The next step is stiring the concentrated sugar liquid into the mold and powder.
