Block Coconut Sugar

“Indonesia is one of the largest producer and supplier of ococonut sugar in the world and maintains a good reputation for growing large high quality coconut sugar.

We have been producing block coconut sugar for so long time. We make it into tube shape. It has higher moisture content than the granule. It has a stronger aroma and taste, subtly sweet almost like brown sugar but with a slight hint of caramel. It has steady quality so that it can be reliable.

Block Coconut sugar is made from the nectar of the coconut blossom flower. The sugar is obtained from the finest selection of coconut nectar and cooked well to obtain a consistent blend. The result is then processed without preservatives nor any artificial food additives.

This block coconut sugar can be used to sweeten many products such as beverages, chocolate, and confectionery items.

Coconut sugar has a combination of sweet taste and light caramel/toffee flavor notes. It is a healthier and tastier alternative to regular sugar and can be used for :

  • Coffee, chocolate, ginger tea
  • Baking, glazing, desserts
  • Muesli and granola
  • Making home made coconut jam/salted caramel sauce
  • Indonesian traditional delicacies such as cendol, putu, rujak.

The Benefit

Compared to cane sugar, coconut sugar has a high mineral content. It is rich of potassium, magnesium, zinc and iron. Coconut sugar also contains Vitamins B1, B2, B3, B6 and a glycemic number of 35. This number is a low glycemic index, which means a lower impact on blood sugar levels. These qualities along with the fact that, it is considered more natural because it does not go through all the chemical processes like refined cane sugar. Coconut sugar can be used as a 1:1 substitute for refined sugar for coffee, tea, cakes and cooking.

Coconut sap contains 16 amino acids. The amino acid that has the highest content in coconut sap is Glutamine.

Manufacturing Process

We combine the traditional and modern process for making coconut sugar. Coconut sugar has several forms, in granule form, block or liquid.

The process is as follows :

  • It starts with harvesting the blossoms of a coconut tree. Farmers make a cut on the spadix little by little to get a nectar.
  • The nectar starts to flow from the cut and then collected in bamboo tubes.
  • The result of the nectar is then wighed
  • Measurement of sugar content (brix) and acidity level (ph)
  • Filtering coconut sap to avoid dirt and then transferred into a big space.
  • The nectar is placed over moderate heat to evaporate the moisture content of the nectar.
  • As the water evaporates, it starts to transform into a thick syrup-like a chocolate substance.
  • It  is then poured into a tube shape to get coconut block.
  • storage in closed containers
